Το εστιατόριο Selene και η γέννηση της σαντορινιάς κουζίνας
Λίγα μέρη στην Ελλάδα διαθέτουν τόσο ισχυρή γαστρονομική ταυτότητα όση το Selene Restaurant, ένα εστιατόριο που συνδέεται στενά με την κληρονομιά, ανακάλυψη και προώθηση των γαστρονομικών θησαυρών της Σαντορίνης. Το εστιατόριο Selene, πνευματικό παιδί του Γιώργου και της Έβελιν Χατζηγιαννάκη ιδρύθηκε στα Φηρά το 1986. Στην 35ετή του ιστορία έχει περάσει από πολλές φάσεις και δοκιμασίες χωρίς ποτέ να σταματήσει να εξελίσσεται και να εκπλήσσει τους καλεσμένους του.
'Στην αρχή, ξεκινήσαμε με διεθνή κουζίνα. Ωστόσο, οι τουρίστες ενδιαφερόταν περισσότερο για τη φάβα παρά για τα φιλέτα και το στήθος πάπιας', λέει ο Γιώργος Χατζηγιαννάκης, ηγετική φιγούρα της σαντορινιάς γαστρονομίας. Φυσικά, η παρουσίαση της φάβας σε ένα ευρύτερο κοινό δεν ήταν καθόλου εύκολη υπόθεση, ειδικά στο παραδοσιακό στιλ. Αλλά με την προσθήκη άλλων συστατικών, όπως η κάπαρη και οι λιλιπούτειες τομάτες, έγινε σχετικά γρήγορα μία απροσδόκητη μεγάλη επιτυχία.
