(Ungrafted Vines planted in the early 80s, Fagias terroir in Cephalonia, 1.6 ha, low yields, spontaneous fermented, 6 m in stainless steel, 12.5% abv). Restrained on the nose needing time to unfold its aromatic spectrum yet more on the mineral side with a grapefruit core. Layered and ripe on the palate with quince and saltiness along a strong vein of acidity. An interesting wine to follow its evolution and a promising effort by Panos Sarris.
