Acroterra: The new Thymiopoulos and Chryssos project in Santorini
Producer Apostolos Thymiopoulos fron Naoussa region will soon release three Santorini labels under the Acroterra brand.
With this addition Thymiopoulos will currently have presence in three important Greek PDO's; Naoussa, Rapsani and Santorini. Acroterra is a joint venture with Spyros Chryssos including privately owned vineyards in Pyrgos village regarded as one of the best (if not the best) Santorinian terroirs.
Acroterra Santorini will be the introduction to the style and the philosophy of the winery, being a blend of Assyrtiko, Athiri and Aidani. It will be followed by single vineyard Santorini Skafida fermented and matured in big oak casks. The flagship wine will be Acroterra Assyrtiko which will be released in two vintages: 2015 was vinified and matured in oak for 8 months and 2016 has seen no oak at all. In the blend top parcels from the Louros part of Pyrgos will be included.
Thymiopoulos says that he is looking for a refinement in the Santorini expressions by combining the fullness on the palate with a refreshing taste from the lava like in Humbrecht's Rangen de Thann Riesling. ''My aim is to have a full bodied wine but with a perfect balance not showing the warmth of the alcohol. Taste the Acroterra Assyrtico 2016 and you will understand...'' he added.
All the wines will be released very soon except for the single vineyard Skafida.
