Selected vineyard sites around the village of Pyrgos. Ungrafted vines aged 150–200 years. Traditional dry-farmed vineyards trained in the kouloura basket system. Spontaneous fermentation occurs in a combination of stainless-steel tanks (75%) and French oak barrels (25%) at controlled temperatures (16–17°C) for approximately three weeks. 25% of the wine matures for 12 months in French oak barrels with regular bâtonnage, while the remaining wines spend 30 months on the lees in stainless-steel tanks.
