Doric Wines, White 2017
Mountainous Roditis and Malagousia from high altitude vineyards in Fokida, Central Greece at 800 m altitude. Hand-harvested, destemmed, 7 days skin contact, natural winemaking, minimal SO2 addition, (from 2018 vintage there is none added) 11.8% abv. Vivification follows the wine tradition of the area including fir branches on top of fermenting grapes. According to producer George Balatsouras whose total production is under 5000 bottles, this is applied for three reasons: 1. to keep the cap submerged 2. to add discrete aromas of resin 3. for further protection from oxidation
