First Vintages: H μεγάλη κάθετη των κρασιών της Βορείου Ελλάδας μέχρι το 1984
Πολύ συχνά ο κόσμος αλλά και αρκετοί επαγγελματίες δοκιμάζουν ένα κρασί που έχει στην πλάτη του κάμποσα χρόνια ηλικίας και εκστασιάζονται μόνο με την ιδέα ότι είναι παλιό. Δεν νομίζω ότι αυτό είναι αρκετό. Το ζητούμενο δεν είναι το κρασί να έχει αντέξει στον χρόνο αλλά το αν έχει ξεδιπλώσει πολυπλοκότητα αρωμάτων, γεύσεων και υφών.
Να έχει γίνει δηλαδή καλύτερο από ότι ξεκίνησε! Δεν είναι εύκολο αλλά αυτή είναι η παράδοξη αλήθεια. Το να έχει μόνο επιβιώσει και να είναι ζωντανό μάλλον υποβαθμίζει παρά προάγει την ποιότητα ενός κρασιού. Άλλο λοιπόν το γερνάει και άλλο το παλαιώνει!
