Navitas, Terre de Zeus Assyrtiko 2023, Pieria
13% abv, pH 3.1, 6.5 g/l total acidity, 1.3 g/l residual sugar. Produced from 100% Assyrtiko from a single vineyard in Pieria, planted at up to 100 metres on stony soils. Two-thirds of the grapes are whole-bunch pressed, while the remaining third receives 24 hours of skin contact. Fermentation is with indigenous yeasts in stainless steel, followed by six months on the fine lees with gentle stirring.
