Πως παλαιώνει η Σαντορίνη: μέρος δεύτερο

Πρόσφατα είχα την ευκαιρία να δοκιμάσω 8 κρασιά, 8 παλαιωμένες Σαντορίνες με το νεότερο κρασί να είναι στην εξαετία και το παλαιότερο στα έντεκα χρόνια από τον τρύγο. Έχοντας κατά νου την προηγούμενη μεγάλη γευσιγνωσία Σαντορίνης (διαβάστε εδώ το πως παλαιώνει η Σαντορίνη) πρέπει να ομολογήσω ότι ήμουν επιφυλακτικός. Στα συμπεράσματα της προηγούμενης φοράς είχε καταγραφεί ότι το μαξιλάρι των 10 ετών ήταν σημείο αναφοράς. Πάντα με βάση τα κρασιά που είχαν δοκιμαστεί πριν τρία χρόνια που ήταν χωρίς επίδραση βελανιδιάς και με δεδομένο όσο πιο παλιά είναι μια φιάλη τόσο μεγαλύτερη διακύμανση παρατηρείται και συνεπώς και ρίσκο.
