11.5% abv. Produced from 100% mountain-grown Roditis from the steep, stony slopes of Aigialeia, at 840–1,100 metres. The grapes are hand-picked and handled through the estate’s gravity-flow winery, followed by a short cold pre-fermentation maceration and low-temperature fermentation in stainless steel. 6.3 g/l acidity, pH 3.23 and less than 1 g/l residual sugar.
