Sarris, Robola 2024, Cephalonia
12% abv. Produced from 100% Robola from the Fagias and Omala vineyards in Kefalonia, on limestone soils at around 650–700 metres. The grapes are whole-bunch pressed, fermented with indigenous yeasts in stainless steel, matured for six months, and bottled unfiltered. pH 3.35, total acidity 6.4 g/l, residual sugar 1 g/l. Production: 20,000 bottles.
