Situated in the semi-circular Piazza della Repubblica, within the elegant Anantara Palazzo Naiadi, INEO restaurant, which has been awarded one Michelin star, reflects the personality of its chef, Heros De Agostinis.

Every restaurant mirrors its creator. At INEO, memory, travel, and origin shape the experience. De Agostinis describes his cuisine as a mix between memory and the stories I lived during my travels.” ‘’Raised between Italian and Eritrean traditions, I was surrounded by spice in everyday life,’’ he says. At INEO, spice is present but used with restraint and a sense of wisdom. It never overwhelms but enhances flavours, adding depth.

Veal sweetbreads with Roman puntarelle, pink grapefruit, and ají amarillo clearly demonstrate this effect. The spice lifts rather than overwhelms. Another dish I adore, Sicilian red prawns with muhammara, follows the same approach: natural sweetness, gentle warmth, and a clean finish. The line-caught sea bass with broccoli, cabbage, and green curry is aromatic yet precise.
